We had 240 loaves ready for our grand opening. We were supposed to shut down at 2pm but we stayed open long enough to clear out the line of cars that had already queued up before closing time. We ran out of food at around 3pm - apologizing to the last car that they were stuck with their second choices since we were out of their first picks.
Julie and Katie came by and helped us start making more loaves to replace what we'd already sold - three days' worth. Nicole got on the phone with the supplier and doubled the order that we'd already placed. I'd only calculated 400 loaves for the first week and more than half of that was already gone - and that didn't count the 40 loaves that we'd baked for our soft opening.
